Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes with an electric mixer).
  3. Add the egg, molasses, and vanilla extract. Beat until well combined.
  4. In a separate bowl, whisk together the flour, rolled oats, baking soda, ground ginger, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
  6. Using a cookie scoop or spoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
