  • 4 large eggs, preferably at room temperature
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Lay out bread slices on a cutting board and use a heart-shaped cookie cutter (3 to 4 inches) to cut out the center of each slice. Save the cut-out pieces for a snack.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Let it melt and bubble without browning (about 1-2 minutes).
  3. Place the bread slices in the skillet and toast for 1-2 minutes until lightly golden on the bottom. Flip carefully using a spatula.
  4. Crack one egg into a small bowl to check for shell bits, then gently pour it into the heart-shaped hole on the toast in the skillet. Repeat for each slice if possible.
  5. Sprinkle a pinch of salt and freshly ground black pepper over each egg.
  6. Cook the eggs for 2-3 minutes on medium-low heat until the whites are set but yolks remain runny. For firmer yolks, cover the pan with a lid for about a minute.
  7. Optional: Carefully flip the toast with the egg for over-easy eggs and cook for another 30 seconds to 1 minute.
  8. Serve immediately with optional garnishes like chopped chives, shredded cheese, or hot sauce.

Notes

Use medium-low heat to avoid burning the toast before the egg is cooked. Let eggs come to room temperature for even cooking. Butter adds flavor but can burn quickly; mixing with a little oil can help. If you don’t have a heart-shaped cutter, use a small round or square cutter or cut a heart shape with a knife. Toast the bread first before adding the egg to keep it crispy longer. For over-easy eggs, flip carefully with a wide spatula or skip flipping and cover the pan to cook yolks gently.
