  • 2 pounds bone-in, skin-on chicken thighs
  • ⅓ cup honey (about 113 grams)
  • 4 cloves garlic, minced
  • ⅓ cup soy sauce (80 ml), low sodium preferred
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes
  • Optional: squeeze of lemon juice

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides lightly with black pepper.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, and black pepper until well combined.
  3. Arrange the chicken thighs skin-side down in an even layer at the bottom of the crockpot.
  4. Pour the honey garlic sauce evenly over the chicken thighs.
  5. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken is tender and cooked through (internal temperature at least 165°F).
  6. Optional: Transfer chicken to a baking sheet and broil for 3 to 5 minutes skin-side up to crisp the skin.
  7. Serve with extra sauce spooned over and garnish with chopped green onions or sesame seeds if desired.

Notes

Pat chicken dry before seasoning to help sauce cling better. For crispy skin, broil chicken after slow cooking. Sauce can be thickened by removing chicken and simmering sauce on high in crockpot for 10-15 minutes. Use tamari for gluten-free option. Boneless thighs cook faster; adjust time accordingly.
