Ingredients

Scale
  • 2 ¾ cups (345g) all-purpose flour
  • 1 cup (227g) unsalted butter, cold and cubed
  • ¾ cup (150g) granulated sugar
  • ½ cup (65g) powdered sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • ¼ tsp almond extract (optional)
  • 1 tsp baking powder
  • ½ tsp salt
  • Food coloring (optional)
  • White icing or edible markers for decorating

Instructions

  1. Prep your ingredients: Take the cold butter out of the fridge and cube it. Let the egg come to room temperature (about 20 minutes). Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together 2 ¾ cups (345g) all-purpose flour, 1 tsp baking powder, and ½ tsp salt. Set aside.
  3. Cream butter and sugars: In a large bowl, beat 1 cup (227g) cold, cubed unsalted butter with ¾ cup (150g) granulated sugar and ½ cup (65g) powdered sugar using an electric mixer on medium speed until pale and fluffy, about 3-4 minutes. Chill if butter gets too soft.
  4. Add egg and extracts: Beat in 1 large room temperature egg, 1 tsp pure vanilla extract, and ¼ tsp almond extract (if using). Mix until just combined.
  5. Combine wet and dry: Gradually add the dry ingredient mixture to the wet ingredients in batches, mixing on low speed just until the dough comes together. Avoid overmixing.
  6. Chill the dough: Divide the dough into two discs, wrap tightly in plastic wrap, and refrigerate for at least 1 hour.
  7. Roll out the dough: Lightly flour your surface and rolling pin. Roll one dough disc to about ¼ inch (6 mm) thickness. If dough cracks, let it warm slightly or press cracks gently with your fingers.
  8. Cut out cookies: Use conversation heart cookie cutters to cut shapes from the dough. Place cookies about 1 inch (2.5 cm) apart on prepared baking sheets.
  9. Bake: Bake in the preheated oven for 10-12 minutes, or until edges begin to turn golden and centers look soft.
  10. Cool: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  11. Decorate: Once cooled, use white icing or edible markers to write sweet messages on the cookies. Let icing set before stacking or storing.

Notes

Keep butter cold until mixing for a flaky crust. Avoid overmixing after adding flour to prevent tough cookies. Chill dough for at least 1 hour to help cookies hold shape. Use parchment paper for a crisper bottom. Decorate cookies after cooling to avoid smudging. Dough can be prepared up to 2 days ahead or frozen for up to 3 months.
