Ingredients

Scale
  • 1 ½ pounds beef sirloin or stew meat, cut into 1-inch cubes
  • Salt and pepper to taste
  • ¼ cup all-purpose flour
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth (low-sodium recommended)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon freshly ground black pepper
  • 2 cups cooked white or brown rice

Instructions

  1. Pat beef tips dry with paper towels. Season generously with salt and pepper on all sides. Lightly dredge beef cubes in flour, shaking off excess. (Prep time: 10 minutes)
  2. Heat 2 tablespoons of oil in a heavy-bottomed skillet or Dutch oven over medium-high heat until shimmering. Add beef cubes in a single layer without overcrowding. Sear for 2-3 minutes per side until browned but not cooked through. Remove beef and set aside. (Cook time: 6-8 minutes)
  3. Reduce heat to medium. Add butter to the pan. Once melted, add chopped onions and garlic. Cook for 3-4 minutes until softened and fragrant, stirring often.
  4. Sprinkle remaining 2 tablespoons of flour over onions and garlic. Stir constantly for 1-2 minutes to cook out raw flour taste. Gradually whisk in beef broth, scraping browned bits from the pan. Add Worcestershire sauce, thyme, and black pepper. Bring to a gentle boil, then reduce to a simmer.
  5. Return seared beef to the pan, nestling it into the gravy. Cover and simmer gently for 25-30 minutes, stirring occasionally, until beef is fork-tender and gravy is thickened. Add more broth or water if gravy is too thick.
  6. While beef simmers, cook 2 cups of rice according to package instructions.
  7. Taste gravy and adjust seasoning with salt and pepper as needed. Serve beef tips and gravy over steaming rice. Garnish with fresh parsley if desired.

Notes

For gluten-free, substitute all-purpose flour with almond flour or gluten-free flour blend. For dairy-free, replace butter with olive oil and add a splash of cream or coconut cream for richness. If gravy is too thin, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir in, simmering until thickened. If too thick, add broth a splash at a time. Searing beef first locks in flavor and creates a rich gravy base. Slow cooker method: brown beef and sauté onions, then cook on low 6-8 hours and thicken gravy before serving.
