  • 2 cups (240 g) all-purpose flour

  • ½ cup (120 ml) melted unsalted butter
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 tsp vanilla extract
  • 2 tbsp (30 ml) melted butter for topping
  • 2 tbsp (25 g) granulated sugar for topping
  • 1 tsp cinnamon for topping

Instructions

  1. Reduce the apple cider: In a small saucepan, simmer 1 cup (240 ml) of apple cider over medium heat until it reduces to about ½ cup (120 ml). Let it cool.
  2. Prepare the loaf pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  3. Combine dry ingredients: In a large mixing bowl, whisk together 2 cups (240 g) all-purpose flour, 1 tsp baking powder, ½ tsp salt, and 1 tsp cinnamon.
  4. Mix wet ingredients: In another bowl, whisk 2 large eggs, ½ cup (120 ml) melted butter, ½ cup (100 g) granulated sugar, ½ cup (100 g) brown sugar, 1 tsp vanilla extract, and the cooled reduced apple cider.
  5. Combine wet and dry ingredients: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Avoid overmixing.
  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool: Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack.
  8. Add the topping: Brush the loaf with 2 tbsp (30 ml) melted butter, then sprinkle generously with a mixture of 2 tbsp (25 g) granulated sugar and 1 tsp cinnamon.
