  • 2 ½ cups (300g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup (120g) powdered sugar (for glaze)
  • 2 tbsp milk (for glaze)
  • ½ tsp ground cinnamon (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your bundt pan thoroughly.
  2. In a small saucepan, simmer 1 cup of apple cider over medium heat until it reduces to about ½ cup. Let it cool.
  3. In a large bowl, whisk together 2 ½ cups (300g) of all-purpose flour, 1 tsp baking powder, ½ tsp baking soda, 1 tsp salt, 1 tsp cinnamon, and ¼ tsp nutmeg.
  4. In a separate bowl, beat ¾ cup (170g) of softened butter, 1 cup (200g) granulated sugar, and ½ cup (100g) brown sugar until light and fluffy.
  5. Beat in 3 large eggs, one at a time, followed by 2 tsp vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the reduced apple cider. Start and end with the dry ingredients.
  7. Transfer the batter to the prepared bundt pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack.
  10. Whisk 1 cup (120g) powdered sugar, 2 tbsp milk, and ½ tsp cinnamon until smooth.
  11. Drizzle the glaze over the cooled cake and let it set before serving.
