  • 1 ½ cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon yellow cornmeal
  • ¼ teaspoon salt
  • 3 large eggs, room temperature
  • ½ cup unsalted butter, melted and slightly cooled
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Place oven rack in the lower-middle position.
  2. If using a store-bought crust, let it thaw fully at room temperature. Press crust into a 9-inch pie dish, crimp edges, and chill in the fridge.
  3. In a medium bowl, whisk together sugar, flour, cornmeal, and salt until combined.
  4. In a large bowl, beat eggs until just blended (about 30 seconds with mixer or 1-2 minutes by hand).
  5. Slowly pour melted butter into eggs while whisking continuously until silky and slightly thickened.
  6. Gradually add dry sugar mixture to egg and butter mixture, whisking constantly until fully incorporated.
  7. Stir in apple cider vinegar and vanilla extract until smooth.
  8. Pour filling into chilled pie crust and smooth the top with a spatula.
  9. Place pie on a baking sheet and bake at 350°F for 50–60 minutes until edges are set and golden but center jiggles slightly.
  10. Cool pie completely on a wire rack for at least 2 hours before slicing.

Notes

Use room temperature eggs to avoid curdling. Chill the crust before filling to prevent shrinking. Tent edges with foil if browning too quickly. Avoid overmixing eggs to prevent puffing and deflating. Baking at 350°F ensures slow, even cooking and prevents cracking.
