Instructions

  1. In a medium mixing bowl, combine peanut butter and unsalted butter. Beat with a hand mixer on medium speed until smooth and fluffy (about 2 minutes).
  2. Add powdered sugar, vanilla extract, and a pinch of salt. Mix until fully combined and the dough starts to pull away from the sides (2-3 minutes). If mixture is too crumbly, add 1 tablespoon milk or cream.
  3. Using a tablespoon or small cookie scoop, portion out about 1 tablespoon of dough. Roll each portion into an oval shape, then pinch the ends to create football points.
  4. Place footballs on a parchment-lined baking sheet. You should get 20-24 footballs.
  5. Refrigerate footballs for at least 20 minutes, or until firm.
  6. Place chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second bursts, stirring after each, until smooth (about 1-2 minutes total).
  7. Using two forks, dip each chilled peanut butter football into the melted chocolate, coating completely. Let excess chocolate drip off, then place back on parchment-lined sheet. Sprinkle with flaky sea salt if desired.
