  • 3/4 cup (65g) unsweetened cocoa powder (mix of Dutch-process and regular recommended)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (120g) powdered sugar
  • 23 teaspoons milk (dairy or non-dairy)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two cookie sheets with parchment paper.
  2. In a large bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy (2-3 minutes).
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet mixture, mixing on low until just combined.
  6. Using about 2 tablespoons of dough per cookie, roll into balls and shape into footballs. Place 2 inches apart on prepared sheets.
  7. Bake for 10-12 minutes, until cookies look set but still soft in the center.
  8. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.
  9. Mix powdered sugar, milk, and vanilla extract in a small bowl to make icing. Adjust milk for desired consistency.
