  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 ¾ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat the oven to 375°F (190°C) and line cookie sheets with parchment paper or silicone mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 1 ½ cups granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in 2 large eggs one at a time, then stir in 1 teaspoon vanilla extract until combined.
  4. In a separate bowl, whisk together 2 ¾ cups all-purpose flour, 2 teaspoons cream of tartar, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula just until combined.
  6. In a small bowl, combine ¼ cup granulated sugar with 2 teaspoons ground cinnamon for the coating.
  7. Scoop dough by rounded tablespoons (about 1.5 tablespoons or 22 grams) and roll into balls.
  8. Roll each dough ball generously in the cinnamon sugar mixture to coat completely.
  9. Place coated dough balls 2 inches apart on the prepared baking sheet.
  10. Bake for 8-10 minutes, until edges are set and tops have a slight crackle; centers may look slightly underbaked.
  11. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chill dough for 30 minutes if cookies spread too much. Rotate baking sheets halfway through baking for even browning. Use softened butter, not melted. Do not overmix after adding flour. Use cream of tartar for classic tang and chewiness.
