  • 1 teaspoon baking soda

  • 1 cup (227 g) unsalted butter, softened
  • 1 ¼ cups (250 g) brown sugar, packed
  • ¼ cup (50 g) granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon mint extract
  • 1 ½ cups (270 g) semi-sweet chocolate chunks
  • A few drops green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your cookie sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until fluffy, about 3 minutes.
  4. Beat in the eggs, vanilla extract, and mint extract until fully incorporated. Add green food coloring if desired and mix until the color is even.
  5. Gradually mix the dry ingredients into the wet ingredients on low speed, scraping down the bowl as needed. Do not overmix.
  6. Fold in the chocolate chunks gently with a spatula until evenly distributed.
  7. Cover the dough and refrigerate for at least 30 minutes (optional but recommended).
  8. Lightly flour your surface and roll the dough to about ¼ inch (6 mm) thickness. Use a shamrock cookie cutter to cut shapes and place cookies about 2 inches apart on the prepared baking sheet.
  9. Bake for 10-12 minutes or until edges are set but centers still look slightly soft. Watch closely to avoid overbaking.
  10. Cool cookies on the baking sheet for 5 minutes, then transfer to a cooling rack to finish cooling.
