A comforting and easy-to-make casserole that combines tender ribeye steak, caramelized onions, bell peppers, and a creamy cheese sauce with pasta for a delicious twist on the classic Philly cheesesteak.

  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or vegetable oil
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded provolone cheese
  • 2 cups whole milk
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1/2 teaspoon smoked paprika (optional)
  • 4 cups cooked pasta (penne or elbow macaroni)
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Prep the Ingredients (10 minutes): Thinly slice ribeye steak against the grain. Slice onion and green bell pepper thinly, mince garlic. Cook pasta according to package instructions until al dente, then drain and set aside.
  2. Sauté the Veggies and Steak (15 minutes): Heat olive oil in a large skillet over medium-high heat. Add onions and bell peppers, cook until soft and caramelized, about 5-7 minutes. Add garlic for the last minute. Push veggies to the side, add steak, cook until browned but still juicy, about 3-4 minutes. Season with salt and pepper. Remove from heat.
  3. Make the Cheese Sauce (10 minutes): In a medium saucepan, melt butter over medium heat. Whisk in flour and cook 1-2 minutes until smooth roux forms. Slowly whisk in milk, stirring constantly until sauce thickens, about 5 minutes. Remove from heat. Stir in mozzarella and provolone until melted and smooth. Season with salt, pepper, and smoked paprika if using.
  4. Combine Pasta, Steak, and Cheese Sauce (5 minutes): In a large mixing bowl, toss cooked pasta, steak and veggie mixture, and cheese sauce until evenly coated. Adjust seasoning if needed.
  5. Assemble and Bake (20-25 minutes): Preheat oven to 350°F (175°C). Pour mixture into a 9×13 inch casserole dish and spread evenly. Sprinkle extra shredded mozzarella on top if desired. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  6. Rest and Serve (5 minutes): Let casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

Freeze steak for 20 minutes before slicing for easier thin slices. Cook onions and peppers low and slow for best caramelization. Avoid overbaking to prevent dryness. If cheese sauce is too thick, whisk in a splash more milk before combining. Can substitute pasta with spiralized zucchini or cauliflower rice for low-carb version. Vegetarian and dairy-free adaptations possible.
