A bold and flavorful fusion of jalapeño poppers and classic enchiladas, featuring creamy cheese, spicy jalapeños, and tender chicken wrapped in warm tortillas.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 block (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 34 jalapeños, diced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 810 medium flour tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar cheese (for topping)
  • 1/2 cup chopped fresh cilantro (optional, for garnish)
  • 1/4 cup sour cream (optional, for serving)
  • 1/4 cup sliced jalapeños (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your baking dish with cooking spray.
  2. In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, Monterey Jack cheese, diced jalapeños, garlic powder, onion powder, and smoked paprika. Stir until fully combined and creamy.
  3. Spread 1/4 cup of enchilada sauce evenly on the bottom of your baking dish.
  4. Warm the tortillas slightly to make them pliable. Spoon about 1/3 cup of the chicken filling onto each tortilla and roll it up tightly.
  5. Place the filled tortillas seam-side down into the prepared baking dish, arranging them snugly side by side.
  6. Pour the remaining enchilada sauce evenly over the tortillas, making sure they’re fully coated.
  7. Sprinkle the shredded cheddar cheese on top for that irresistible golden, bubbly finish.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and slightly browned.
  9. Let the enchiladas cool for 5 minutes before serving. Garnish with fresh cilantro, sour cream, and sliced jalapeños if desired.
