A comforting, indulgent casserole featuring creamy chicken, gooey cheese, and crunchy Doritos that’s perfect for family dinners or potlucks.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or diced
  • 2 cups Nacho cheese Doritos, crushed
  • 1 can cream of chicken soup
  • 1 cup sour cream (or Greek yogurt)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/2 cup milk
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies

Instructions

  1. Preheat the oven to 375Β°F (190Β°C).
  2. Shred or dice your cooked chicken into bite-sized pieces.
  3. In a large bowl, combine the cream of chicken soup, sour cream, milk, taco seasoning, and diced tomatoes with green chilies. Stir until smooth.
  4. Fold in the shredded chicken and half of the shredded cheese into the creamy mixture.
  5. Spread a layer of crushed Doritos in the bottom of your baking dish.
  6. Pour the chicken mixture over the Doritos, spreading it evenly. Top with the remaining shredded cheese.
  7. Place the dish in the preheated oven and bake for 20-25 minutes, or until bubbly and golden on top.
  8. Sprinkle the remaining crushed Doritos over the casserole during the last 5 minutes of baking for extra crunch.
  9. Let the casserole rest for 5 minutes before serving.

Notes

[‘Use freshly shredded cheese for better melting.’, ‘Allow the casserole to rest after baking for easier serving.’, ‘Adjust the spice level by using mild taco seasoning or omitting diced chilies.’, ‘Add the final layer of Doritos just before serving for maximum crunch.’]
