Ingredients

Scale
  • 2.53 lb boneless pork shoulder or pork butt
  • 1 tbsp kosher salt
  • 2 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth or water
  • 1 1/2 cups barbecue sauce
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 18 slider buns or mini brioche rolls
  • 1/4 cup unsalted butter, melted
  • 2 cups coleslaw mix (optional)
  • 1/3 cup dill pickle slices
  • Optional: sliced red onion, jalapeΓ±os, or shredded cheese

Instructions

  1. Pat the pork shoulder dry with paper towels. Mix salt, smoked paprika, black pepper, garlic powder, and onion powder in a small bowl. Rub the spice blend all over the pork and place it into the slow cooker.
  2. Pour apple cider vinegar and chicken broth (or water) around the pork. Cover and cook on low for 8 hours or high for 5-6 hours.
  3. While the pork cooks, whisk together barbecue sauce, brown sugar, Dijon mustard, and Worcestershire sauce in a bowl. Adjust to taste.
  4. When the pork is fork-tender, transfer to a cutting board and shred with two forks. Return shredded pork to the slow cooker, pour over the BBQ sauce, and stir to coat.
  5. Preheat oven broiler. Arrange buns cut-side up on a baking sheet, brush with melted butter, and toast for 1-2 minutes until golden.
  6. Pile warm BBQ pulled pork onto each bun. Top with coleslaw mix, pickle slices, and any other favorite toppings. Cap with bun tops and serve.

Notes

For best results, cook pork on low for maximum tenderness. Toasting buns adds crunch and prevents sogginess. Pork and sauce are naturally gluten-free; use gluten-free buns for dietary needs. Pulled pork can be made ahead and reheated. Customize toppings to taste.
